Ms Murphy, Head of Home Economics, writes: “Home Economics students enjoyed a series of informative cookery demonstrations led by Patricia McClean from the Livestock and Meat Commission (LMC). These sessions played an important role in supporting students’ learning, helping them understand where food comes from and the processes that ensure quality, safety and sustainability across the meat industry.”

“Patricia prepared a range of dishes using high‑quality, locally sourced ingredients, demonstrating healthy and affordable recipes that students can recreate at home using their recipe books. As she cooked, she talked students through each stage of the journey, from local farms to the consumer’s plate, highlighting the importance of traceability, strong animal welfare standards, and the role of the LMC’s Quality Assurance Scheme in guaranteeing safe, responsibly produced food.”
